Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 medium zucchinis, spiralized
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • Juice of 1/2 lemon
  • Pinch of red pepper flakes

Instructions

    In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, and cook for 1 minute.

    Add shrimp and cook until pink, about 2-3 minutes per side.

    Add zucchini noodles (zoodles) to the skillet and toss with the shrimp.

    Cook for another 1-2 minutes until zoodles are slightly tender.

    Squeeze lemon juice over the top before serving.
